Designed as an open and cohesive environment, Dan Bakstudio allows production, preparation, and everyday gathering to unfold side by side. Visitors are invited into the rhythms and precision of artisanal craft, while the bakery itself is continually animated by movement, scent, and the quiet presence of shared routines.
A bespoke Douglas fir shelving system defines the interior and acts as the organising element of the space. Inspired by the rational structure of laboratory environments and the warmth of traditional Swedish interiors, the grid- like framework integrates storage, display, technical functions, and spatial divisions into one cohesive architectural gesture. Rather than dividing the space into distinct rooms, the system establishes a sequence of open and enclosed zones throughout the floor plan – subtly framing seating areas while screening back-of-house functions and production areas.
Positioned along the street-facing façade, the spaces remain visually connected to both the life of the bakery and the movement of the city outside. Through subtle layering, transparency, and soft spatial transitions, the interior balances openness with a sense of calm enclosure.
Framed by the warm rhythm of the Douglas fir shelving system, two seating areas offer intimate pockets for pause and conversation within the open bakery landscape.
Due to the existing building’s elongated footprint and limited natural light, the interior is carefully composed to enhance softness, rhythm, and visual openness. Suspended linen shades gently diffuse light across the space, while the restrained tonal palette creates a calm and intimate atmosphere. Seating niches positioned along the perimeter offer quieter moments for pause and conversation, allowing guests to feel both connected to and gently removed from the activity of the bakery itself.
Every element within is designed specifically for the project – from the custom granite counter and suspended lighting to the furniture pieces. Unified through a carefully considered material palette and understated detailing, the interior reflects a contemporary interpretation of Scandinavian design traditions – tactile, restrained, and deeply rooted in atmosphere.
From the tactile grain of the Douglas fir and woven seating surfaces to the integrated shelving and restrained material palette, the interior reflects an appreciation for process, patience, and refinement.
The shelving system became the defining element of the project. It hosts everything from storage and display to ovens and technical functions, allowing every element to have its place while keeping the bakery calm, open, and organised throughout the day.
The grid creates a sense of rhythm throughout the space – layering openness and enclosure, visibility and privacy. Rather than separating functions into distinct rooms, the system allows seating, storage, display, and production to coexist within one cohesive architectural framework.
At the centre of the bakery stands a monolithic granite island crafted from locally sourced stone from the Varberg coast. Combining rough, untreated surfaces with refined polished planes, the counter embodies the project’s balance between raw materiality and careful refinement. Stainless steel elements introduce a sense of precision and functionality, while soft plaster walls, woven textiles, and pale timber surfaces create a warm and quietly tactile atmosphere throughout the space.
Designed as a flexible architectural framework, the interior allows the bakery to shift naturally throughout the day – from early morning production to slower moments of gathering and pause. Fixed elements and adaptable functions are woven together into a cohesive whole, balancing permanence with everyday use.
